During blogmas, I mentioned that we have pear pancakes with blueberry sauce for Christmas breakfast. I received a lot of questions about them, so I thought I’d find out for you what the recipe is! It turns out it wasn’t a standard recipe found online – it was one that my MIL cobbled together. And it’s really simple:
Pear Pancake
Ingredients
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 large egg
3 tablespoons butter, melted
1 pear, peeled and coursely grated (Bosc is a good variety)
Directions
• Sift together the flour, baking powder, salt and sugar
• Mix in the milk, egg and melted butter, and grated pear
• Make pancakes on griddle
Blueberry Sauce
1/2 cup water
1/2 cup white sugar
1/2 cup blueberries (fresh wild blueberries are best!)
Directions
• Stir water, sugar, and blueberries in a saucepan and bring to a boil
• Reduce heat to low and simmer until sauce thickens, for about 15 minutes
• Serve over pancakes and enjoy!
The funny thing is that this year for Christmas we switched it up and had apple pancakes instead. 😛 The base recipe is the same, just switch out the grated pear for finely diced Granny Smith apple and add some cinnamon to the batter. We opted for pure Canadian maple syrup instead of the blueberry sauce. We also had sausage rounds and bacon on the side. 😀

Yuuuuuum! We had crepes stuffed with eggs, sautéed mushrooms, sausage and cheese. And of course there was maple syrup for those who wanted it 😀

Mr. Al is the crepe master in our house. we normally have them with fruit / berries, yoghurt and syrup, but decided to try savoury crepes for something different.

I prefer sweet crepes too but savoury is sometimes a nice change – I remember having seafood crepes at a restaurant and it was delish.

Wow, I’m going to have to try this recipe! Our standard Christmas breakfast is orange rolls, grits, bacon, fruit, and egg sausage casserole.

I planned on posting a recipe or two over Christmas, but clearly that didn’t go well! 😀
I love pancakes, but I haven’t made them in over a year for health reasons! I usually use a recipe that pretty much works for aebelskivers, too (got the special pan and all), and I gotta try it with pear and blueberry! Sounds wonderful.
